The last time I cooked with butternut squash, I made soup. I’d heard great things about it and love trying new foods and recipes, so why not? My family wasn’t crazy about it, though. I wasn’t sure if it was just the recipe or butternut squash in general.
Last week at the farmers market I dropped a baby butternut squash into my bag hoping for better results. Mission accomplished. Enter: my butternut squash pizza recipe.
I roasted, peeled and lightly salted my little butternut squash. Using a pre-made whole wheat crust from the grocery, I preheated the oven to the package’s specifications. We had an already-open bottle of garden marina sauce so I used it as my base since it already had some onions and what not. I spread a generous helping of Italian blend shredded cheese and then added my toppings: mushroom, butternut squash (about 1/3 of the little size), bacon bits, feta cheese, seasonings, and more shredded cheese. While the pizza baked, Lil and I snacked on the left over cubes of roasted butternut squash.
Butternut squash pizza with zero leftovers. So I guess we’re just not fans of the soup. The vegetable itself is a winner. I added some of the left over quash to a spinach salad for lunch.
